1 cup old fashioned oats
1 cup plain greek yogurt
1 cup milk of choice
1 large banana (chopped)
1½ tsp vanilla extract
2 Tbsp maple syrup
1 pinch of salt

2 cups granulated sugar
4 cups mixed berries
Juice of half a lemon
1 pinch of salt
1 dash of cinnamon
1 star anise

About this Recipe

This recipe came from a small cafe in Vancouver. Almost every morning, I would pick up a cup of these oats on my way to work. And when I moved away, the chef was kind enough to share this recipe with me. These overnight oats are very simple, yet satisfying at the same time. Fans of sweets and lazy cooks, give this a try.

  • Mix all ingredients for the oats in a bowl and refrigerate for at least 12 hours before portioning it in airtight containers (like mason jars.)
  • For the compote, place all the ingredients in a pot and simmer for about two hours until the compote has reduced. (Note: the compote can be kept in the fridge for up to 3 days.)
  • Assemble the overnight oats by placing the compote on the bottom of your container, then add 4-5oz of the oats mixture, and top with 1-2oz of greek yogurt. Add berries, coconut flakes, or hemp seeds. Whatever goes on top is up to you. Go wild!
