100-120 grams macaroni (½ cup to ⅔ cup)
2 cups water
1 tsp chicken bouillon powder
6-7 Tbsp cream of chicken soup
Julienned ham
Fried egg
Mixed vegetables
About the Recipe
You can find this macaroni soup in Cha Chaan Teng (Hong Kong style cafes). It is a mixture of Chinese and Western cuisine. Always on the breakfast menu, it is classic, delicious, and comforting. Macaroni soup is usually based with creamy chicken soup, topped with ham and eggs or sometimes satay beef or spiced pork if you want a very full brunch.
Instructions
- Bring a medium size pot of water to a boil. Add macaroni and cook to instructions on packaging.
- In another pot, add chicken powder and cream of chicken soup then bring to a boil. Add mixed vegetables and simmer until they are tender.
- Add ham and simmer for another two minutes. Turn off heat.
- In a frying pan, heat 1 Tbsp of oil over medium heat and make your fried egg, set aside.
- Spoon macaroni into a bowl, add soup mixture, and place the fried egg on top. Enjoy!
Note: Try fried spam or frankfurter for another delicious topping!
