500g Marinated beets (4 cups)
2 fresh cucumbers
3 medium radishes
1 litre kefir (4 cups)
Dill
Salt
Pepper
Spring onions
4 boiled eggs
Mustard
About this Recipe
Aukstā Zupa is the most popular Latvian cold soup and is eaten every summer in enormous quantities. It will cool you down even on the hottest day. Aukstā Zupa is a seasonal dish, so it’s practically impossible to find it in winter on any menu. There are numerous versions of this dish and all of them taste amazing. The spectacular pink color is always gonna cheer you up.
Instructions
- Pour kefir into a large pot.
- Add beetroot, chopped cucumbers, radishes, fresh dill, and spring onions.
- Season with salt, pepper, and mustard to taste.
- Mix thoroughly.
- Then leave the soup in the refrigerator until well-chilled.
- Serve with a hard-boiled egg cut in half.
Tip: Use only the strong Russian Mustard
